Orange & Poppyseed Cake

I have been telling the girls at work for weeks about the cakes and cupcakes that I have been making and they made me promise to bring them in some cake next time I made one. Last night I got the urge to bake so I pulled out my favourite cookbook and made an Orange & Poppyseed Cake.

Orange & Poppyseed Cake

The only issue I ran into with this recipe was that it was for cupcakes and therefor told me to bake them for 18 minutes. I baked the cake for 45 minutes and it still come out runny in the middle. I think in the end I ended up cooking it for about 1 hour & 15 minutes. But now the inside is nice and fluffy and the bottom is a little too crispy. Corey didn't seem to mind though. He ate about a quarter of the cake within half an hour of it being out of the oven. If anyone would like to try these out here is the recipe...

Market Morning Cupcakes
from Crabapple Bakery Cupcake Cookbook by Jennifer Graham

(This is the recipe with full quantities. It makes 24 loaf cakes or 30 regular cupcakes. I made half the recipe and made 1 round cake)

2/3 cup poppy seeds
1 1/4 cups milk
3 3/4 cups plain flour
2 1/2 tsps baking powder
1/4 tsp salt
300g softened unsalted butter
zest of two oranges
2 1/2 cups white sugar
5 eggs
1 1/2 tsp vanilla extract

Soak the poppy seeds in the milk for at least half an hour.

Preheat the oven to 170 degrees C. Lightly grease or line your loaf or cupcake tins.

Sift together flour, baking powder and salt.

In another bowl, cream the butter for 1-2 minutes. Add the orange zest and beat for a 1 minute. Add the sugar a third at a time, beating for 2 minutes after each addition. After the last addition, beat until the mixture is light and fluffy and the sugar has almost dissolved.

Add eggs one at a time, beating for 1 minute after each addition or until the mixture is light and fluffy. Add the vanilla extract and beat until combined.

Add a third of the flour mixture and beat on low speed until combined. Add half of the milk and poppy seed mixture and beat until combined. Repeat the process. Add the remaining third of the flour mixture and beat until thoroughly combined; do not overbeat as this will toughen the mixture.

Spoon mixture into the tins, filling each about three quarters full. Bake for 18 minutes or until a skewer comes out clean. Remove from the oven and allow to cool for 5-10 minutes in trays before turning out onto a cooling rack.

Op Shop Finds

It has been so long since I have been op shopping but today I was lucky enough to hit up a few op shops that I don't usually frequent. Corey and I both had the day off work so we drove down to Kirra to go to Pizza Hut for lunch. Corey loves Pizza Hut but because it is down the other end of the coast we hardly ever go. On the way back we stopped in at a few op shops. I didn't buy a lot but this is what I found.

Op Shop Finds

A house shaped cookie jar.

Op Shop Finds

2 vintage knitting pattern books.

Op Shop Finds

A teapot print scarf.

I am loving scarves at the moments so this teapot scarf will definitely be in high rotation. This whole lot cost me a mere $7. Bargain shopping at its best!!! Have you found any good bargains op shopping lately?

Daily Style - Keen As Mustard

Mustard is one of my all time favourite colours. It gives you the awesomesness of yellow without being to bright. Love it!

Daily Style - Keen As Mustard

I bought this jumper last night. It is the first thing I have bought since my shopping ban ended and I still didn't shop until 1 week after the ban. I think I have a better idea of how much I was spending on clothes now so hopefully that will make me a little more reserved with my shopping habits.

Daily Style - Keen As Mustard

I love this little hair bow! It is huge and makes me feel like a school kid for some reason. Corey is going away for the night with some of his mates so I have the house to myself. I think I might swing past my mum and dads and then settle in with some movies and some knitting. Sounds like a fun night to me!

Chocolate Self Saucing Pudding

Last night a few of our friends came around to watch State of Origin. My team lost so we won't talk anymore of that. What we will talk about is the delicious self saucing chocolate pudding that I made for dessert. Not exactly footy food but a great winter dessert.

I only managed to get a photo of them straight out of the oven before my camera died. I ended up serving them with a sprinkle of icing sugar and a scoop of ice cream. This was my first time making a self saucing pudding and I found it a bit strange putting all the water on top. I didn't think they would work but they did.

Chocolate Self Saucing Puddings by Australian Womens Weekly

2 cups boiling water

Preheat oven to 180 degrees celsius (160 for fan forced ovens). Grease a 1.5 litre ovenproof dish.

Melt butter with milk in medium saucepan. Remove from heat; stir in extract and caster sugar then sifted flour and cocoa. Spread mixture into dish.

Sift brown sugar and extra cocoa over mixture. Gently pour water over mixture.

Bake pudding about 40 minutes or until centre is firm. Stand 5 minutes before serving.

Childhood Memories

Misfits Vintage has posted a photo from her childhood this morning and invited us all to do the same. I went through the small amount of childhood photos I have on my laptop and chose this one.

5

This is me and my cousin Stuart sitting on my dad's old Triumph. I am not certain but I think this was at our house in Clark street which is the first house we lived in when we moved to the Gold Coast from Sydney. I could be wrong though! Mum can correct me in the comments if I am wrong.

So now it is your turn! Find a photo from your childhood and share it with the world. If you do leave me a comment so I can come and check it out.

Read More - June

It has been another slow month on the reading front for me. I either need to find more time or start picking smaller books to read. The latest Harry Potter book I finished took me the majority of the month.Just like everyone who has read them I love Harry Potter and this book is no different. I have started on book 6 but I don't think I will manage to finish it plus book 7 before the last movie comes out. The Secret Life of Backpackers was a great read! It has done the rounds in my family. My sister brought it home then passed it onto my dad, then mum and now me. It is funny because it kept reminding me of when we backpacked in New Zealand in 2007 even though it is set in Australia. I guess wherever you backpack the culture is the same within the backpacker circuit. To Love, Honour & Betray was a great read but I felt so sad for the main character the whole way through. Nothing was going her way and I think I was a bit stressed out when I was reading it as well so it made me super emotional. I loved the book though. Kathy Lette is a hilarious writer!!!

So I am massively behind on my goal to read 52 books this year. This month brings me up to 24 books so far for the year. Considering I am half way through the year I am a touch behind. I need to read 4.6 books a month to complete my goal. I better get a move on!!!

A New Skirt & An Outing

This morning I woke up and decided to whip up a skirt with some material I purchased not that long ago. It is a simple self drafted pattern for a pleated a-line skirt. It was super quick and easy to make and the perfect start to a lovely day.

Corey and I spent the day with my parents at a la carte in the park which is a part of the Surfers Paradise Festival which has been running for the past few weeks. A la carte in the park is a food festival where all the local restaurants have stalls and there are cooking demonstrations and live music. It is a lovely way to spend a Saturday afternoon. We ate some amazing food, played board games and listened to music. It was lovely and relaxing and we were lucky enough to get a break in the rain so it was the perfect day. Here are some photos from our day...
